This recipe I generally cook for my guest .It is a pretty simple curry recipe but tastes great .
Cooking and preparation-30-40 minutes
500 grams Potatoes
50 gram ararot/arrowroot(I didn’t have this at home so I used 1cup bread crumbs and 3tbsp of all purpose flour(maida))
Salt to taste
1 small bunch Chopped coriander
10-12 chopped cashew nuts ( kaaju)
10 small raisins (kishmish)
Oil to fry the allo kofta
For the gravy
3 tomatoes diced or chopped
2-3 green chillies according to taste
1 inch ginger
Milk cream/beaten Malai or fresh cream 1 cup
1/2 tsp cumin seeds(jeera)
1/4tsp turmeric powder
1/2 tsp red chilli powder(according to taste )
1/4tsp garam masala
coriander for garnishing
Method and Preparation:-
Step1-Boil potatoes and peel them .When they are little cool mash the potatoes.
Step2-Add bread crumbs and all purpose flour (You can use arrarot powder only(50grams) in the mashed potatoes.
Step3– Add salt and chopped coriander and mix it nicely.
Step4-Make table tennis size round balls and stuff chopped 2 cashew nuts and 2 raisins in it.Prepare the balls for all the mixture.
Step5-First add 1 ball in the hot oil and let it get brown.Be care full in frying it as balls may break out .If it does break then coat all the remaining balls with all purpose flour(maida) so that it doesnt break out or you can add more bread crumbs into the mixture(To make bread crumbs just take few bread pieces which are 1-2 day old and blend the in a mixer grinder without adding any water in it.)
Step6-When all the balls are fried take them out on a tissue paper so that excess oil can be absorbed by paper.
For the curry.
Step1-Add tomatoes, onion, green chillies, ginger in a mixer grinder and make a smooth paste of all the ingredients.
Step2-Heat oil in a pan.Add cumin seeds into it when hot.
Step3 -Add all whole of tomato puree and the masalas mentioned above.
Step4-Let it cook for 5-6 minutes till it leave some oil.
Step5-Add the cream and mix it nicely.Add a glass of water in the gravy and let the gravy simmer on slow gas for about 7-8 minutes more.
Add the koftas when you want to eat the gravy and garnish with chopped coriander.If you find the gravy thick after few hours then you can add some more water and let it simmer on slow flame for few minutes.
Enjoy with Nan, paratha , chapati or rice.Taste delicious
