I enjoyed this hot cabbage rice with curd this Sunday with my hubby.It was raining cats and dogs here and we sat in the balcony and ate it all .Tastes grate and it has cabbage which is a great source of roughage and vitamin C which makes the rice healthy too.
Before starting off with the recipe let me give you a little tip of buying cabbage.
When ever you buy cabbage look for heads that are of a reasonable size and compactness, with leaves that are tender, not withered or puffy.
Now lets start with the recipe
Cooking and Preparation-30 minutes
1.5 cup cooked rice
1 cup shredded cabbage
1 onion chopped
Carrot , peas , corns(optional , I used carrot and peas)
2-3 green chillies chopped
1tsp ginger garlic paste
1tsp cumin seeds(jeera)
2tbsp. coriander powder(dhaniya)
1tsp chana dal
1/4tsp turmeric powder(if you don’t like the yellow color then skip this one)
3-4 curry leaves
Salt to taste
Step1-Take a pan and add shrdded cabbage, peas and carrot in it.Sprinkle some water over the veggies and add little salt in it.Close the lid and cook till the veggie gets soft.
Step2-In another pan heat oil and add cumin seeds, channal dal and curry leaves.Fry till the dal turns little brown.
Step3-.Add the green chillies , chopped onion and ginger garlic paste.Saute the mixture for 3-4 minutes
Step4-Add boiled cabbage, carrot and peas in it.
Step5– Add little more salt, turmeric and coriander powder and mix well.
Step6– Add cooked rice and mix well.
Serve hot with curd or raita
