Methi bhaat Recipe
Come winters and I start looking for ways to include methi(fenugreek leaves), spinach and other green leafy vegetables in my dishes.Spinach rice recipe is some what similar to methi rice only thing is that one has to take care of the bitterness of fenugreek leaves.To remove the bitterness from fenugreek leaves we add chopped tomatoes in it and if still it exists then some lemon juice.
This is in our lunch today as hubby is home and got to make something quick so that I can sit and work here and this was best healthy option available.
Here we go with the Fenugreek rice recipe
Soak 2 cups of rice in water for 15- 20 minutes
1 cup methi leaves(Fenugreek leaves), (I di not add the stems only the leaves and chop them finely)
1 chopped onion
2 chopped green chillies
2 chopped tomatoes
1.2 tsp red chilli powder
Salt as per taste
1/2 tsp turmeric powder(haldi)
1/2 tsp cumin powder
1/2 tsp garam masala powder
1/2 tsp cumin seeds
1 tbsp -oil
Method and Preparation:-
Step1– Add oil in a heavy pan and cumin seeds (jeera) when hot.Add chopped green chillies and chopped onion into it and fry till they are lightly brown in colour.
Step2 – Add fenugreek leaves and saute them for 2-3 minutes.
Step3 – Add coriander powder(dhania powder), red chilli powder, jeera powder, garam masala and turmeric powder and saute it well for 2- 3 minutes more.
Step4 – Ass the soaked rice in it and let it get soaked in the masala.
Step5 – Add salt and 31/2 cups of water.
Step6 – Do not cover the rice and use light hand to mix the rice when it is half done.
Step 7– Cook till it is done
Serve with any raita or curd.
P.S – If you still find the rice little bitter then add 1 tsp. of lemon juice in it.
