Recipe of Dahi Vada
Little bit of recipes which I have shared with you here on Wise She is because of my mom.She has always let me experiement anything in her kitchen and make a giant mess of it.Someday I use to cook some dish so badly that there was no utensils left for the next meal. From chopping green chilli in a pan just to make them look pretty and thinking of boiling tomatoes in pressure cooker without water is all what I use to experiment in those days.I wonder if I will have the same patience with my daughter in future
I was getting nostalgic as my mom is in Delhi right now so I thought of thanking her by making her favorite Dahi Vada’s.
Dahi Vada’s are lentil dumpling which are topped with sweet and spicy yogurt chutney.You can serve them as chat or as a side dish.
Ingredients RequiredServes 3-4)
- 3/4th cup moong dal(washed lentils)
- 1/4th cup washed urad dal
- Oil to fry
- 1 1/2 cup yogurt
- 1 teaspoon salt
- 1/2 teaspoon red chilly powder(If you have degi mirch you can use that it looks pretty)
- 1/2 teaspoon roasted cumin seed powder
- 3 tablespoons tamarind chutney(I use the market one)
- 1tsp powder mustard seeds
- 3-4 cup water.
- Chopped corrainder 1 bunch
- Chopped green chillies 2-3
- 1/2 cup cold milk
Method and Preparation of Dahi Vada
Step1 – Clean and soak both the dals in 4-5 cups of water for 5-6 hours .Drain out the water and add chopped green chillies, chopped coriander powder, salt (according to taste),red chilli powder and blend dal in a mixer grinder.You need to make the mixture thick otherwise making vada will be difficult.Still if the mixture turns out to be thin in consistency then you can add 1tbsp. or more as required gram flour powder in it.

Step2 – Now take a clean muslin cloth and cover a small bowl with it and hold it tightly from below.Place small ball of mixture and give it a flat shape as shown below.
ï»¿Step3 – Deep fry the vadas and take them out in blotting paper if you find them oily.Like my mom I took them out patiently so they were oil free altogether .
Step4 – Boil 2-3 glasses of water and add 1tsp salt and 1tsp mustard powder in it.Add the fried vadas in it.
Step5 -Press the vadas in your palms and squeeze out the water from it.
Step6 – Take the curd and add 1/2 cup cold milk in it to whip the curd.Add 2-3 tsp of sugar in it and whip it again.
Step7 – Take a quarter plate place 2-3 vadas pour out the curd on it.Sprinkle cumin powder, little salt and red chilli powder on it.If you have tamarind chutney add dash of it .
Step 8 – Serve them cold
You can make these vadas with just urad dal or moong dal as well.Have it as a sweet dish after any meal everyone is going to love it It can lasts for 5-6 days easily in your fridge
