5 Quick Diwali Recipes For Lazy Ones
This post is not to offend anyone but is actually quite helpful for those who seldom put the cooking hat due to lack of time because of work and other family obligations. Well, starting from myself, I don’t usually cook except for special occasions like Diwali , Dusshera or when guests are visiting at my place. So if I am not cooking the daily food I am not lazy right girlss because I do cook once in a while and then I give my maid aÂ surprise leave! :-p
So this post is for all those who can easily manage to prepare a few recipes on the eve of Diwali and earn lots of compliments from family members and given the fact that you are popular as an occasional cooking person, you will be praised even highlyy! Believe me I do make sure to do this :-p
So now the question arises as to what to cook when you have not much time left to prepare elaborate dishes for Diwali. Here I have tried to put five different and quickly prepared dishes which are also popular in the festive season and which you can easily cook on Diwali.
This is one of the starters that is prepared at my place for the evening snack before the Puja is held. The recipe is easy and is prepared quickly.
- 10-15 medium Caulifower Forets
- 4-5 tbsp Gram flour
- Spices (red chilli, turmeric, salt, garam masala)
- Fresh coriander leaves
- Green chilli (finely chopped)
Method Of Preparation–
Firstly the cauliflower florets are steamed for about 8-9 minutes so that they are partially cooked. Now in a bowl the gram flour along with other spices is mixed to form a rich batter which is a little viscous and not too runny. The green chilli and coriander leaves are added to it.
Now in a deep frying pan oil is heated on a low flame and the cauliflower florets are dumped in the mixture and fried on a medium flame until golden in color. Since the cauliflower is easily cooked during steaming process, one doesn’t needs to fry it for a long time. The cauliflower dumplings are ready to be served with the all time favorite green chutney.
Tawa Paneer Recipe
Since Diwali is an auspicious festival, generally vegetarian food is preferred in the dinner and so I am sharing a quick and easy paneer recipe with you all.
- 250g Paneer (cut into cubes)
- 2 medium Onion (finely chopped)
- 2 medium Tomato (sliced)
- 1/2 Green Bell Pepper (finely chopped)
- 1 tsp Ginger-garlic paste
- Oil/ Butter to cook
- Salt (as per taste)
- Spices (Red chilli, coriander, turmeric ,pav bhaji masala/ garam masala+ dry mango powder)
- Cilantro leaves to garnish
Method of Preparation–
This dish can be prepared easily and quickly just on the tawa or a shallow pan. You need to prepare the gravy mixture by sauteed onion and tomato puree. Add the spices and let the mixture cook for a few minutes. Add the paneer cubes and stir thoroughly to ensure all the paneer cubes are coated with the gravy. Let the mixture cook for a little while and also let the cubes soak the masala properly to give a better taste. Sprinkle some fresh cilantro leaves on the dish and it is ready to be served with veg rice or chapati as per your choice.
Chana Daal Recipe-
- 2 medium cups Chana daal
- 2 large onion (finely chopped)
- 2 medium tomato (chopped)
- 1 green chilli
- Spices ( red chilli, turmeric, coriander powder, garam masala)
- 1 pinch Asfoetida
- 1 tsp Giner-garlic paste
- Butter/oil (to cook)
Method of Preparation-
Firstly soak the chana dal in water for an hour. After that in a pressure cooker, cook it thoroughly and keep aside. Then prepare a thick mixture of sauteed onion along with tomatoes.
Add fresh cilantro leaves/methi leaves as per choice on the mixture. Now pour this mixture to the cooked daal and stir well. Add salt as per taste and continue to stir on a simmer flame. As the daal reaches a medium consistency, remove it from the flame. After a while serve hot with steamed basmati rice.
Fruit Custard Recipe-
This is another easy recipe to try on the eve of Diwali. A sweet dish will surely treat the sweet tooth of the family members.
Method Of Preparation–
Prepare the custard mixture with vanilla custard powder and almond milk. Use artificial sweeteners if you are on a weightloss diet.
As the custard mixture is prepared. Let is cool down and afterwards serve in individual glass bowls. You r fruit custard is ready to be served.
This is an essential sweet dish made by most people on festivals.
- 3-4 tbsp Rice (washed and strained)
- 2 Liters Milk
- Dry fruits( cashew, almond, pistachio)
- Sweetener or Sugar (3-4 tsp)
Method of Preparation-
Heat the milk in a deep pan until it reduces to 1/3 rd of the quantity. Add ground cardamom powder and rice. Stir at intervals until rice gets cooked. Alternately add a little more milkÂ if mixture looks too thick. As the rice gets cooked, turn the flame off and add artificial sweetener or sugar. Now let it stand for a few minutes. Add the dry fruits and serve hot or cold as per preference.
