I and my husband looovve having Dal Makhni .We have tried Dal Makhni in Goa, Delhi, Jaipur, Jaisalmar, Kosani and Amritsar too.But with my experience I can only say that there is no comparison of Delhi Makhni with any other state dal.If you are in Delhi and have been to Sanjeev Kapoor restaurant then you can know what is the real taste of Dal Makhni.Here is the Sanjeev Kapoor dal makhni version which I simply adore..It doesn’t have cream and still tastes delicious.
This is how the recipe goes:)
Whole black gram (sabut urad dal)1/2 cup
Red kidney beans (rajma)2 tablespoons
Red chilli powder1 teaspoon
Salt to taste
Ginger, chopped2 inch piece
Butter 3 tablespoons(Cant avoid this :P)
Oil 1 tablespoon
Cumin seeds1 teaspoon
Garlic chopped6 cloves
Onion chopped1 large
Green chillies slit2
Tomatoes, chopped2 medium
Garam masala powder 1 teaspoon
Step1-Wash and soak sabut urad and rajma over night in three cups of water.
Step2-Now add both dal and rajma with three cups of water with salt and half red chilli powder and half ginger .Give whistles accordingly.(When I was in Delhi I use to give 6 whistles but here I give 4 so whistles depends upon the rajma quality and water too)
Step3-Open the lid and check wether rajma is soft and properly cooked.If not cooked then cook it on low heat till the rajma becomes totally soft.
Step4-Now take a pan in a pan and add cumin seeds.When they change color add ginger , garlic and onion and saute them till they turn light golden brown in color.
Step5-Add slit green chillies and tomatoes and saute them on high heat.
Step6-Add the remaining red chilli powder and saute till the tomatoes are reduced to a pulp.
Step7– Now add the cooked dal and rajma .(You can add more water of you find that the mixture is too thick .
Step8-In the end adjust salt and garam masala powder.
Step9– Simmer again on low heat till the dal gets well blended .
Serve hot with rice, naan or paratha.
