Last two days I was busy in packing my stuff and therefore cooking had taken a back seat.Since last week I have stopped buying any grocery and was trying to finish up every thing which was available in my kitchen.Yesterday in afternoon I had only few tomatoes and rice left and then I remembered my mother good old tasty recipe of tomato rice.
It is so easy to make and is a wonderful side dish which will make your family ask for it more and more.
Here goes the recipe
Preparation and cooking-20 minutes
2 cups Rice
5 to 6 Tomatoes (cut into pieces)
2 medium Onion (cut into pieces)
6 to 8 Green chilies (slit)
1 tsp Chilly powder
1/2 tsp Turmeric
1 piece Ginger (grated)
4 flakes Garlic (grated)
1 piece Cinnamon
3 tbsp Oil(You can use butter or ghee also)
Method and preparation:-
Step1-Boil rice and keep it separately.You can use left over rice as well.
Step2-Take a kadai or a heavy pan and roast some cashewnuts and raisins in 1tbsp of ghee .Keep them seprately.
Step3-In the same pan add cinnamon,cloves and ginger-garlic paste and saute it for 1 minute.
Step4-Add thinly sliced onion and tomatoes and saute them for five to eight minutes.Add salt,turmeric powder and red chilli powder and sprinkle some water so that tomatoes get mashed easily.
Step5-Cook till all ingredients gets tender and are mixed properly.
Step6-Add the cooked rice and mix it well.
Step7-Add roasted cashew nuts and raisins.
Tomato rice is ready to be served.If you are making it as a main dish then you can serve it with curd, raita, pickle or boiled eggs.
