Indian Veg Spaghetti Recipe


I love spaghetti and pasta in any shape and form. So whenever I feel like eating something in the middle of the day, I just take a little whole-wheat spaghetti, whip up this easy-to-make tomato and basil sauce and I am set!

  • 2 to 3 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 clove garlic, chopped
  •  1 tablespoon salt
  •  ½ tablespoon sugar
  • Basil Leaves
  • Mint Leaves
  • Paprika to taste
  • 1/4 teaspoon pepper
  • tomato paste
  • Diced or crushed tomatoes
  • 1 teaspoon dried leaf oregano
  • 1/2 cup grated Parmesan cheese
  • Step1 – Cook Spaghetti in water for about 6-8 minutes. Drain the spaghetti and save the starch water (in which the spaghetti was boiled) because it will be used in our tomato basil sauce later.
  • Step2 – Heat olive oil and sauté onions and garlic in the oil until tender and translucent.

  • Step3 - Add chopped tomato. You can also use readymade tomato paste or ketchup for this, but since I always have fresh tomato readily available in my pantry, I prefer using it. You can also blend tomato instead of chopping, but it works equally well with chopped tomatoes, so why bother.

  • Step4– Add salt, paprika and oregano to taste.
  • Step5- Simmer for 30 minutes, stirring occasionally till the tomato is soft and tender. Squish the tender tomatoes to break them. If you prefer to have chunks of tomato in your sauce, you needn’t do this step. I love my sauce smooth and thick, so I squish them.Add basil leaves and mint leaves to taste

  • Step6 – Add starch water (from the drained spaghetti) so that the tomato mix turns into a thick consistency. Cook this for another 3-5 minutes, depending on how thick you want your sauce to be. Bring to a gentle boil.
  • Step7– Add sugar to create a nice balance in taste. This is one of the most essential steps, so don’t skip it.
  • Step8 – Stir in cheese and then toss in drained spaghetti after you have turned off the heat.

  • Step9 – Garnish with cheese, crushed black pepper, oregano and/or fresh basil leaves. At this stage, I leave out the cheese (A moment on the lips, forever on the hips, y’all!) and add way too much oregano. After all, cooking is all about finding out what works for you and what doesn’t.

    • Do try it out Eesha! Paprika is made from seeds of a particular kinda bell pepper…it’s easily available in stores…if that’s not available, you can try adding chili flakes instead

        I always thought hat it needs many store bought sauces to pep up its taste.

          Thats true…even i used to think it required too many complicated ingrdients…but its actually so simple na?

          U shud totally ask ur son to have it…the way my dad had taught me was to put one end in my mouth and then suck it in like a wire with a fish mouth..hehe…It used to be so much fun!
