One can write a book on Kadhi when it comes to their types and varieties .To name a few there is sindhi Kadhi,Pakore wali kadhi,Papad kadhi,vadi(mangori) kadhi etc.Similarly there is Gurjrati Kadhi and as the name suggest it is from Gujrat.Most of the Gujrati dishes are sweet in taste and so is Gujrat Kadhi.In North India Kadhi is really spicy and tangy and therefore is made from 2-3 days old curd.In Gujrati Kadhi we use fresh curd .I especially like it with Rice .It taste great with Paratha ,puri and chapattis too.
Let us learn how to make it.
2 tablespoons gram flour
2 teacups fresh curds
3-4 curry leaves
2 tablespoons sugar(as per your taste too)
1 tbsp chopped coriander
1 teaspoon chilli-ginger paste
salt to taste
For the tempering
1/2 teaspoon mustard seeds
a pinch asafoetida/Hing(Optional if you don’t like the taste)
1 broken red cilli piece
2 teaspoons ghee(You can use 1tsp oil and 1 tsp ghee to save on calories)
Step 1:Filter the curd with a sieve to get light and same consistency.
Step2:Take 3 tea cups of water and add gram flour and curd in it.Beat it nicely .
Step3:Add the chilli-ginger paste, curry leaves, sugar and salt and put to boil.
Step4:Keep stirring it continuously so that curd doesn’t get curdled(rotten)
Cook it for 10 minutes .
Step1-Take a small pan and add mustard seeds into it till they start crackling.
Step2:Add asafoetida and red chilli in it.
Step3:Add this tempering to the kadhi and boil for a few minutes.
Step4:Sprinkle chopped coriander on top and serve hot.
