Instant and easy Vegetable Frittata Recipe

Vegetable frittata is a popular dish in went and a great breakfast meal.Kids love it and can be experimented with different vegetables.You can club spinach and cheese together or you can add olives .I generally add what ever is available at home be it mushroom,potatoes,cabbage or capsicum.You can use your favorite cheese in it and if you are calorie conscious then can skip the cheese part from the recipe.

Serves 4
2 tbsp. olive oil
1 onion, chopped
2 medium boiled potatoes slices.
1 red pepper or capsicum chopped or you can cut into strips
5-6 black olives drained and sliced(optional)
4 eggs
grated cheese
1/4 cup milk
salt according to taste
1.4tsp white pepper
1 tbsp. chopped parsley(optional)

Step1-Pre heat oven to 350 degrees.

Step2-Take a pan saute chopped onion,potatoes and other vegetables in olive oil.

Step3:Take a baking pan and spread the vegetables across the bottom of greased pan.

Step4:Meanwhile, beat together the eggs, milk, cheese and spices. Pour egg mixture over the vegetables.

Step5: Bake for 35-40 minutes.

Step 6:Cut into squares after frittata has cooled slightly.
