Instant Gajar ka achaar(carrot pickle)

Carrot has got multi level benefits for our body .Generally when carrots starts going out of season people generally store it in the form of achaar.Here is a simple carrot achaar which is liked by almost every one.


This is a spicy achaar and it has no vinegar in it therefore those who prefer khatta achaar should not try it.

Ingredients:-


1/2 kilogram gajar (carrot)

1/2 tsp turmeric powder

1 tbsp red chilli powder

1 tbsp saunf (fennel) powder

2 tbsp salt

1/2 tbsp rai (small mustard seeds) – grounded

150ml mustard oil

1/4tsp Astofoteida(Hing)

Procedure:-

Carrots after drying it for 3-4 hours

1.Wash carrots thoroughly and peel them Cut them in 1 1/2 inch pieces and then divide these pieces lengthwise.Dry them under sunlight for a day or 3-4 hours.


2. Take a pan and heat mustard oil till smoke starts coming out from it.Add hing powder into it and allow it to cool for 1 minute and then add red chilly powder,turmeric powder and salt into it.(Note use salt according to your taste though gajar achaar needs lot of salt as gajar has a tendency to soak it)

(There are different types of mustard seeds available in the market. Mustard seeds which I have used in it is above one)

3.Now grind rie(small mustard seeds) and saunf(fennel)powder and add it into the carrot.Mix it well.


4. Fill the achaar in an air tight glass jar and keep aside for few days under sunlight.

Put it under sunlight for 2 days in summer and for a week in winters and serve with parathas and curd..
