Lauki ki sabji with pictures (Vrat ka khana)

 When I got aware about bottle gourd juice (Lauki juice) for weight loss and various other benefits of it I tried  including this vegetable more in my diet.Lauki raita and Lauki kofte are one of my favorite but this sabji I make in vrat(fasting).If you are not on fast then you try this Lauki cooking tip which was shared by one of my friend Rupa and I never forget to use it.

Coming back to this sabji.It needs less spices and is quiet light on stomach.Excellent for digestion in summers and those who are recovering from ailments can try this too.Ideal to eat during fast and  is quiet fulfilling too.



Preparation time: 15 minutes
Ingredients:

1 medium lauki peeled and cubed
1tsp ginger grated1 tsp cumin seeds(Jeera)
1 tsp garam masala
Oil/ghee
Salt to taste(rock salt in fast)
¼ tsp black pepper powder
2 green chilies chopped
2 medium tomatoes diced
½ tsp. turmeric
Coriander for garnish

Method:

  
Step 1 – Take a pressure cooker and add 1tsp. of ghee in it.


Step2 – Add cumin seeds and let it splutter for a while.Add green chillies, ginger and stir for few seconds again.


Step3– Add turmeric, chilies, ginger and stir for few seconds until all the tomatoes get soft.


Step4- Add turmeric, salt, pepper, garam masalas and stir.
Step5-Add lauki and 1/2 cup of water and mix it well.Put the lid and get 2 whistle on medium heat.

 Garnish with coriander seeds and serve hot.

  3. Yummy!! I am gonna try this recipe tomorrow.

    "my mum uses only lauki, tomato, green chilly, ginger, salt and ghee. mix it well and let the steam do the work. it becomes very spicy lauki with red tomator gray and tastes awesome when we eat it with singhare ke ate ki pooriya ya pakore."
