Leftover recipes-Easy aloo kofta

I had left over boiled rice with me and I tried these kofta with the rice.They turned our great and best thing was it was pretty easy to make them.Koftas are one of the most sort after Indian curry recipes and is loved by every one and therefore I keep indulging myself in many delicious kofta recipes.This one was pretty easy to make and was little different from my previous aalo kofta recipe.

Here goes the recipe
Serve-4 adults

3 medium size boiled potatoes
2 cups of boiled rice
Handful of cashew nuts
handful of raisins
2-3 tbsp. of corn flour
salt to taste
1/2 tsp red chilli powder
1/4 tsp garam masala

For gravy
Onion 1 medium, chopped
Tomato paste – 3 tbsp
Garlic – 2 cloves
Ginger – 1″piece
Garam masala 1 tsp
Red chili powder 1 tsp
Cumin powder ½ tsp
Coriander powder ½ tsp
Turmeric – 1/4 tsp
Light cream ¼ cup
Salt to taste
Method and preparation:-

For koftas

Step1-Mash the rice finely and then add potatoes in it.

Step2-Add raisins, salt and some cashew nuts.If you find the mixture dry then add little yogurt in it.Mix everything well and make lemon size ball and fry them. If the koftas breaks while frying then add 2-3tbsp. of corn flour in it.Fry the balls in oil , taken them out and keep them aside.

Step3-Grind half of the chopped onion, garlic and ginger into a paste.

Step4-Saute the other half of the chopped onion in the oil, after they turn transparent, add the onion paste, turmeric and 1/2 cup water. Cook on medium heat for 5 minutes.

Step5-Add tomato paste, cumin and coriander powder, red chili powder and cook for another 10 minutes. Add water if the gravy looks too dry.

Step6-Add the cream, salt and koftas and simmer for a little while till the koftas are warmed through.

Serve hot with parantha, chapati or rice and garnish with cilantro.
