Sweet rice pan cake can be made when you have guest at home and you want to serve them light sweet snacks.Its quite simple to make and generally loved by those who are fond of coconut.It srves the purpose of a sweet dish and doesn’t make you feel bloated as well.
For the pan cakes
2 cups rice
Ghee or oil to fry the pan cakes
For the stuffing
2-3 cup freshly grated coconut.
3 tbsp sugar
1/4tsp cloves powder
1/4tsp Cardamon powder
For the filling:-
Step1:Heat 1tsp ghee in a pan and add grated coconut into it.
Step2:Fry it in the pan until it is brown.
Step3:Add cardamon ,cloves and sugar into it.
Step4:Fry the mixture until its totally dry on low fire only which will take approximately 2-3 minutes.
Step 1-Soak rice for 2-3 hours and then add sugar into it.
Step 2-Grind into a fine paste with help of a grinder.Batter should be little lighter then pakora batter.
Step3-Heat a non stick pan and spread the portion of the batter as shown in the picture below.
Step4:Cook both the side lightly like a dosa or any other pan cake.Apply ghee or oil on both side.
Step5:Place the portion of the filling in the center as shown in the picture below and roll over from both the end to obtain pan cakes.
